Zaia’s Bunya nut pancakes:
- 3 cups bunya nuts, soaked in water overnight
- 10 eggs
- 1/4 Tbs bicarb soda
- pinch of salt
- dash of Apple Cider Vinegar
- (Buttermilk if available, optional)
Crack the eggs into a blender. Add the bunya nuts and the other ingredients. Blend all ingredients until smooth. I use a thinner mix for larger pancakes and a thicker mix to make pikelets.
Pour some of the mix in a heated skillet (medium heat). Once you see browning on the edges or see the outsides cooked, flip the pancake or pikelets and cook the other side. Serve with homemade jam, fruit, cream, honey…. you name it! Serves 4 – 6.
