Ingredients:
- 2 cups of yam flour
- 1/2 Tbs salt
- Water
Mix flour and salt. Add water a little at a time until the dough is firm and not too dry.
Method:
Break off a small palm full of dough. Roll the dough into a ball, then flatten it on a floured bench. Sprinkle some flour on top of the dough and roll it flat with a rolling pin. Heat a skillet with a bit of ghee or coconut oil (or other saturated fat). Use a spatula to gently pick up the flatbread and put it into the skillet. Fry on high heat. By the time you have rolled out another one, the flatbread in the skillet should be ready to turn.
The flatbread is great with eggs and veggies for breakfast, with curry or on its own with dips. I reckon it is great with everything! Serves around 4.
